Easy Turkey Soup Recipe
Serves 5 Ingredients: 4 1/2 cups reduced-sodium chicken broth, or regular
2 cups water
1 tsp dried thyme, crushed
1/4 tsp pepper
1 cup packaged dried small shell macaroni
1 16-oz pack frozen mixed vegetables
2 cups chopped cooked turkey, or chicken
3/4 cup frozen florida orange juice concentrate, thawed
Florida orange slices, halved (optional) Herb sprigs (optional)
Instructions: 1. In a large saucepan combine broth, water, thyme, and pepper. Bring to a boiling.
2. Stir in macaroni.
3. Return to boiling; reduce heat.
4. Boil gently, uncovered, for 3 minutes.
5. Stir in vegetables; return to boiling.
6. Boil gently, uncovered, for 5 to 7 minutes more or until vegetables and pasta are tender.
7. Stir in turkey and thawed concentrate.
8. Heat through.
9. If desired, garnish with oranges and herb sprigs.
