Caribbean Turkey Rice Salad Recipe

Serves 10

Ingredients:

  • 1 package oven roasted or hickory smoked turkey, about 1 1/2 pound breast
  • 3 cups cooked rice, chilled
  • 1 large tomato, chopped
  • 3/4 cup celery, diag cut
  • 3/4 cup golden raisins
  • 1/3 cup salted peanuts, chopped
  • Dressing:
  • 1/2 cup oil
  • 3 tbsp curry powder
  • 4 tsp curry powder
  • 3/4 tsp dry mustard
  • 3/4 tsp onion salt or garlic salt
  • 1/4 to 1/2 tsp Tabasco sauce


  • Instructions:

    1. Cut turkey into 1/2" cubes.
    2. Place in a large bowl with all other salad ingredients, except peanuts.
    3. Stir together dressing ingredients and pour over turkey mixture.
    4. Mix well.
    5. Cover and refrigerate for 1-24 hours.
    6. Stir peanuts into salad just before serving.
