Caribbean Turkey Rice Salad Recipe
Serves 10 Ingredients: 1 package oven roasted or hickory smoked turkey, about 1 1/2 pound breast
3 cups cooked rice, chilled
1 large tomato, chopped
3/4 cup celery, diag cut
3/4 cup golden raisins
1/3 cup salted peanuts, chopped
Dressing:
1/2 cup oil
3 tbsp curry powder
4 tsp curry powder
3/4 tsp dry mustard
3/4 tsp onion salt or garlic salt
1/4 to 1/2 tsp Tabasco sauce
Instructions: 1. Cut turkey into 1/2" cubes.
2. Place in a large bowl with all other salad ingredients, except peanuts.
3. Stir together dressing ingredients and pour over turkey mixture.
4. Mix well.
5. Cover and refrigerate for 1-24 hours.
6. Stir peanuts into salad just before serving.
