Sausage Broccoli Minestrone Soup Recipe

Serves 8


  • 3 to 4 tbsp olive oil
  • 1 lb Gourmet sausage, or chicken sausage, casing removed
  • 2 cups onion, coarsely chopped
  • 1 clove garlic, minced
  • 8 cups water, or defatted chicken, stock
  • 1 to 2 tsp salt (optional)
  • Freshly ground pepper
  • 2 to 3 fresh basil leaves
  • Pinch of dried hot pepper flakes
  • 1 bunch fresh broccoli, trimmed and cut into small pieces
  • 3 cups potatoes, diced
  • 1/2 cup Italian parsley


1. In a large pot, add olive oil and set over medium heat.
2. Add sausage and onion and saute until meat is brown, about 5 minutes.
3. Add garlic and saute for 1 minute.
4. Add water or stock, salt, black pepper, basil, and pepper flakes.
5. Bring to boil.
6. Cover and simmer for about 20 minutes.
7. Add broccoli, potatoes, and parsley and simmer until potatoes are tender.
