Portuguese Kale Soup Recipe

Serves 6

Per serving: 229 Calories; 2g Fat (9% calories from fat); 15g Protein; 40g Carb ohydrate; 3mg Cholesterol; 483mg Sodium Serving

Ingredients:

  • 20 ounces frozen kale, chopped
  • 1 package Linguiqa smoked sausage, or kielbasa
  • 1 can kidney beans, white or red
  • 1 medium onion, chopped
  • 6 medium potatoes, cut up small
  • 1 tbsp balsamic vinegar, or other vinegar
  • Salt and pepper
  • 1 can beef broth
  • Shot of vermouth, (optional)


  • Instructions:

    1. Cut linguiqa into slices.
    2. Put kale, sausage, beans, and onion in pot with brot h and water to cover.
    3. Add vinegar.
    4. Cook for a couple of hours, covered.
    5. Add potatoes during the last 1/2 hour of cooking.
    6. Cook till tender.
    7. Serve with crusty bread.
    8. Tastes even better the second day.
