Portuguese Kale Soup Recipe
Serves 6
Per serving: 229 Calories; 2g Fat (9% calories from fat); 15g Protein; 40g Carb ohydrate; 3mg Cholesterol; 483mg Sodium Serving
Ingredients: 20 ounces frozen kale, chopped
1 package Linguiqa smoked sausage, or kielbasa
1 can kidney beans, white or red
1 medium onion, chopped
6 medium potatoes, cut up small
1 tbsp balsamic vinegar, or other vinegar
Salt and pepper
1 can beef broth
Shot of vermouth, (optional)
Instructions: 1. Cut linguiqa into slices.
2. Put kale, sausage, beans, and onion in pot with brot h and water to cover.
3. Add vinegar.
4. Cook for a couple of hours, covered.
5. Add potatoes during the last 1/2 hour of cooking.
6. Cook till tender.
7. Serve with crusty bread.
8. Tastes even better the second day.
