Old Fashioned Tomato Gravy Recipe

Serves 4 to 6

Ingredients:

  • 1/2 lb bacon, diced
  • 1 small onion, chopped
  • 2 tbsp flour
  • 1/8 tsp salt
  • 1 pn pepper
  • 1 14 1/2-oz can diced tomatoes, undrained,
  • 3 cups tomato juice
  • 6 hot biscuits, split


  • Instructions:

    1. In a skillet, cook bacon until crisp.
    2. Remove to paper towels to drain; discard all but 2 tablespoons drippings.
    3. Cook onion in drippings until tender.
    4. Stir in flour, salt and pepper; cook and stir over low heat until mixture is golden brown.
    5. Gradually add tomatoes and tomato juice; stir well.
    6. Bring to a boil over medium heat.
    7. Cook and stir for 2 minutes.
    8. Reduce heat; simmer, uncovered, for 15 to 20 minutes or until thickened; stirring occasionally.
    9. Stir in bacon.
    10. Serve over biscuits.
