Ham and Cheese Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 3/4 cups flour
  • 1/3 cup rye flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp light brown sugar
  • 1/3 cup cooked ham, finely chopped
  • 1/2 cup Swiss cheese, shredded
  • 1 large egg, lightly beaten
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 3/4 tsp spicy brown mustard
  • 1/2 tsp Worcestershire sauce
  • 3 drops hot sauce


  • Instructions:

    1. Combine first 5 ingredients in a large bowl; stir in ham and cheese.
    2. Make a well in center of mixture.
    3. Combine egg and next 5 ingredients; add to dry ingredients, stirring just until moistened.
    4. Spoon into greased muffin pans, filling 2/3 full.
    5. Bake at 400 F for 22 to 25 minutes. Remove from pans immediately.
