Ham and Cheese Muffins Recipe
Makes 12 muffins Ingredients: 1 3/4 cups flour
1/3 cup rye flour
2 tsp baking powder
1/4 tsp salt
1 tbsp light brown sugar
1/3 cup cooked ham, finely chopped
1/2 cup Swiss cheese, shredded
1 large egg, lightly beaten
1 cup milk
1/4 cup vegetable oil
3/4 tsp spicy brown mustard
1/2 tsp Worcestershire sauce
3 drops hot sauce
Instructions: 1. Combine first 5 ingredients in a large bowl; stir in ham and cheese.
2. Make a well in center of mixture.
3. Combine egg and next 5 ingredients; add to dry ingredients, stirring just until moistened.
4. Spoon into greased muffin pans, filling 2/3 full.
5. Bake at 400 F for 22 to 25 minutes. Remove from pans immediately.
