Breakfast Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 egg
  • 2 tbsp sugar
  • 1 cup sour cream
  • 1 tbsp shortening,melted
  • 1 tsp prepared mustard
  • 1 1/3 cup sifted flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 pk (2 1/2 oz) Carl Buddig ham, finely chopped
  • 1/2 cup shredded Wisconsin Swiss cheese


Instructions:

1. Beat egg until light.
2. Add sugar, sour cream, shortening and mustard; stir well.
3. Add dry ingredients;stir just until moistened;do not overbeat.
4. Gently, stir in ham and cheese.
5. Fill greased muffin tins 3/4 full.
6. Bake at 400 degrees 20 to 25 minutes.
