Easy Italian Sausage-Vegetable Soup Recipe

Serves 7

Ingredients:

  • 1/2 lb bulk Italian pork sausage
  • 1 cup carrots, sliced
  • 1 large baking potatoes, peeled, cut into 1/2-inch cubes
  • 1 clove garlic, minced
  • 2 14 1/2-oz cans ready-to-serve beef broth
  • 1 can garbanzo beans, drained
  • 1 14 1/2-oz can pasta-style chunky tomatoes, undrained
  • 1 1/2 cups water
  • 1/2 tsp dried Italian seasoning
  • 1 bay leaf
  • 1 cup zucchini, julienned
  • Fresh Parmesan cheese, grated


  • Instructions:

    1. In large skillet, brown sausage; drain.
    2. In 3 1/2 to 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
    3. Cover; cook on low setting for 7 to 9 hours.
    4. Remove bay leaf.
    5. Gently stir in zucchini.
    6. Cover; cook for an additional 30 minutes or until zucchini is tender.
    7. To serve, ladle soup into bowls; sprinkle with cheese.
