Crisp Bacon Muffins Recipe
Makes 12 muffins Ingredients: 8 bacon slices
1 1/3 cups cake flour
1 1/2 tbsp sugar
1 tsp salt
2 1/2 tsp baking powder
1 egg
3/4 cup milk
1 tbsp bacon fat
Instructions: 1. Saute bacon until crisp, and chop fine.
2. Sift flour, sugar, salt and baking powder together.
3. Add the bacon.
4. Combine the egg, milk and bacon fat, and blend into the first mixture.
5. Pour into buttered muffin tins, 1/3 full, and bake in a hot oven (425 F) for 15 to 20 minutes.
