Bacon Cheese Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1/2 lb bacon
  • Vegetable oil
  • 1 egg
  • 3/4 cup milk
  • 1 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup crunchy nugget-type cereal
  • 1 cup Cheddar cheese


Instructions:

1. Cook bacon, drain but reserve dripping, if necessary add vegetable oil to measure 1/3 cup total.
2. In a small bowl combine dripping/oil, egg and milk. Set aside.
3. Crumble bacon, set aside.
4. In a large bowl, combine dry ingredients, make a well in center.
5. Add wet mixture all at once; stir just till moistened.
6. Batter will be lumpy, stir in cheese, bacon and cereal.
7. Fill greased or lined muffin cups 3/4 full.
8. Bake at 400 for 15-20 min.
