Noodles in Broth Recipe

Serves 6


  • 1 lb udon (thick noodles)
  • 2 qts chicken broth
  • 2 cups cubed cooked chicken, or turkey, or pork, or ham
  • 1 carrot, grated
  • 2 green onions, sliced into 1-inch pieces
  • 1/4 cup diagonally sliced celery
  • 1/2 cup thinly sliced bok choy
  • Salt, pepper


1. Cook udon according to package instructions.
2. Drain and rinse under cold water.
3. Heat chicken broth.
4. Add chicken, carrot, green onions, celery and bok choy and season to taste with salt and pepper.
5. Simmer for 5 to 10 minutes to barely cook vegetables.
6. Divide noodles among 6 bowls.
7. Ladle in soup.
