Coffee-Roasted Lamb Recipe

Serves 10

Ingredients:

  • 1 leg of lamb
  • 1 clove garlic, slivered
  • Coarse salt to taste
  • Freshly ground pepper to taste
  • 3 tbsp Dijon mustard
  • 4 tbsp brown sugar
  • 1 cup strong coffee
  • 1 cup burgundy


  • Instructions:

    1. Preheat oven to 400 degrees.
    2. Make small slits in lamb and insert slivers of garlic.
    3. Season generously with salt and pepper.
    4. Spread mustard over lamb and sprinkle with brown sugar.
    5. Combine coffee and burgundy.
    6. Put lamb, uncovered, in roasting pan.
    7. Insert meat thermometer and bake 1 hour, or until thermometer reads 150 degrees, basting every 15 minutes with coffee-wine mixture.
    8. The lamb may be set aside for up to 29 minutes before being sliced and served.
    9. Slice thin.
