Szechuan Noodle Salad Recipe

Serves 6

Ingredients:

  • 4 ounces oriental noodles or spaghetti, broken up
  • 3 tbsp oil
  • 3 tbsp honey
  • 1 tbsp oriental sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 1/2 tsp ginger root, grated
  • 1 tsp crushed red pepper flakes
  • 3 cups chicken, cooked and shredded
  • 1 cup red cabbage, finely chopped
  • 4 green onions, thinly sliced
  • 2 carrots, shredded
  • 1 red bell pepper, chopped
  • 1/2 cup dry-roasted peanuts


Instructions:

1. Cook noodles to desired doneness as directed on package.
2. Meanwhile, in small bowl, combine oil, honey, sesame oil, vinegar, soy sauce, gingerroot and red pepper flakes; blend well.
3. Drain noodles; rinse in cold water to cool.
4. In large bowl combine cooked noodles, chicken, cabbage, onions, carrots and bell pepper.
5. Pour dressing over salad; toss to mix.
6. Sprinkle with peanuts.
7. You can substitute 1 cup of coleslaw mix for the shredded red cabbage.
