Spicy Hot Caribbean Chicken Marinade Recipe

Serves 6


  • 4 green onions
  • 2 jalapenos or serrano chilies (seeded)
  • 1/3 cup lemon juice
  • 1/4 cup honey
  • 2 tbsp veg oil
  • 2 tbsp fresh thyme leaves or
  • 2 tsp dried thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp ground allspice
  • 1/4 tsp nutmeg
  • 6 boneless skinless chicken breasts


1. Place all ingredients except chicken in food processor or blender and blend till smooth.
2. Pour over chicken and marinade for 2-6 hours, but no longer than that.
3. Grill chicken, brushing with marinade.
