Quick Szechuan Chicken Recipe
Serves 4
Nutritional information: 221 calories per serving.
Ingredients: 4 chicken breasts, skinned and deboned
1 1/2 tbsp white-wine vinegar
3 tbsp cornstarch
1 tsp sugar
1 tbsp vegetable oil
1/4 cup water
3 cloves garlic, minced
6 green onions, cut into 1" pieces
5 tbsp soy sauce (low salt)
1/8 tsp cayenne or to taste
Instructions: 1. Cut chicken into 1 1/2" cubes.
2. Lightly toss with cornstarch in bag to coat.
3. Heat oil in skillet; stir-fry chicken and garlic until lightly browned.
4. Add soy sauce, vinegar, sugar and water.
5. Cover and cook 3 minutes or until chicken is cooked through.
6. Add green onions and cayenne; cook uncovered about 2 minutes longer.
