Lime Chicken Shish Kabob Recipe

Ingredients:

  • 2 chicken breasts, cut in cubes
  • 2 limes, juice of
  • 2 clove garlic, minced
  • 1 tbsp low sodium soy sauce
  • 1 tbsp apple juice concentrate
  • 8 oz medium mushrooms
  • 1 red bell pepper, cut in 1" cubes
  • 16 white pearl onions
  • 1 green bell pepper, cut in 1" pieces
  • 2 small zucchini, cubed


  • Instructions:

    1. Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally.
    2. Alternate chicken and vegetables on skewers.
    3. Grill or broil about 10 minutes, turning and basting with marinade.
