Lime Chicken Shish Kabob Recipe
Serves 4

Ingredients: 2 chicken breasts, cut in cubes
2 limes, juice of
2 clove garlic, minced
1 tbsp low sodium soy sauce
1 tbsp apple juice concentrate
8 oz medium mushrooms
1 red bell pepper, cut in 1" cubes
16 white pearl onions
1 green bell pepper, cut in 1" pieces
2 small zucchini, cubed
Instructions: 1. Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally.
2. Alternate chicken and vegetables on skewers.
3. Grill or broil about 10 minutes, turning and basting with marinade.
