Lemon Thyme Chicken Recipe
Serves 4 Ingredients: 1 1/2 pounds boned and skinned chicken breast halves
4 cloves garlic, mashed
2 tbsp olive oil
Salt (optional)
15 sprigs lemon thyme or thyme
2 tbsp lemon juice
Black pepper, freshly ground
Instructions: 1. Place chicken in dish large enough to hold it all in one layer.
2. Break thyme sprigs in half and bruise them.
3. Scatter over chicken with garlic.
4. Toss with olive oil, lemon juice and black pepper.
5. Cover and marinate in refrigerator for 6 to 8 hours, turning 3 to 4 times.
7. Prior to cooking brush marinade off chicken.
8. Grill over medium-hot coals (or in broiler) for about 10 minutes.
9. Turn frequently and sprinkle with a little salt when almost done.
