Hot Chicken and Apple Salad Recipe
Serves 4 Ingredients: 1/2 tsp paprika
1/4 tsp pepper
4 (4 oz) boned, skinned chicken breast halves, cut into bite size pieces
3 tbsp unsweetened apple cider
1 cup diagonally sliced carrots
3 cup (1/2 in) cubes unpeeled
1 lb granny smith apples
1/2 cup (2 oz) Gorgonzola cheese divided
2 tsp minched shallots
2 tbsp white wine vinegar
4 cup torn fresh spinach
Instructions: 1. Combine paprika, pepper and pinch salt in a plastic bag.
2. Add chicken and shake to coat.
3. Set aside.
4. Place cider in an 8-inch square baking dish; microwave at High 30-45 seconds.
5. Add chicken; cover with wax paper and microwave at Medium-High 6 to 7 min, stirring every 3 min. Drain chicken and set Aside.
6. In reserved apple cider mixture, add carrots; cover with plastic and vent.
7. Microwave at High 2 min; stir in apples; microwave at High 1 1/2 to 2 1/2 min or until apples are tender.
8. Drain, reserving 2 tbsp apple cider mixture in baking dish.
10. Combine apples, carrots, chicken and 1/4 cup cheese in a bowl; toss and set aside.
12. Add vinegar and shallots to reserved apple cider mixture in baking dish; microwave at High 1 min; drizzle over chicken mixture with remaining 1/4 cup.
