Honey Chicken Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 1 tbsp baking powder
  • 1 tbsp mustard, dry
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cup skinless boneless chicken breast, cooked/chopped
  • 1 cup buttermilk, at room temperature
  • 1/4 cup applesauce, at room temperature
  • 2 egg whites, whipped
  • 2 tbsp honey


Instructions:

1. Preheat oven at 350F.
2. Prepare 12 muffin tins with cooking spray and flour.
3. In a mixing bowl, combine flour, cornmeal, baking powder, mustard, baking soda, and salt.
4. In a another mixing bowl, combine chicken, buttermilk, applesauce, egg whites, and honey.
5. Mix wet ingredients with dry ingredients just until moistened.
6. Use an ice cream scoop to fill muffin tins 3/4 full.
7. Bake for 20 minutes.
