Fried Chicken with Honey Mustard Vinaigrette Recipe

Serves 4

Ingredients:

  • 2 boneless skinless chicken breast
  • 2 boneless, skinless thighs
  • 3 tsp honey
  • 3 tsp Dijon mustard
  • 2 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1/8 tsp ground red pepper
  • 6 slice pancetta or bacon
  • Peanot oil, for frying
  • 1/2 cup lowfat buttermilk
  • 9 cups mixed lettuces dressing
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • 1/2 tsp kosher salt
  • 1/4 tsp coarsely ground black pepper
  • Pinch red pepper
  • 1/4 cup olive oil



  • Instructions:

    1. In small bowl combine vinaigrette ingredients, except oil.
    2. Whisk in oil until blended, set aside.
    3. Rinse chicken and pat dry.
    4. Slice diagonally into 1-inch wide strips.
    5. To make salad, in medium-sized bowl mix honey, mustard, 1 tsp salt pepper.
    6. Add chicken pieces and turn to coat.
    7. Cover and chill until ready to cook.
    8. In large skillet, cook pancetta over medium heat until crisp.
    9. Drain on paper towels, crumble and set aside.
    10. Wipe the skillet with paper towels.
    11. Combine the bread crumbs with remaining salt and pepper.
    12. Dip the coated chicken strips in butter milk, then dredge in bread crumbs mixture pressing firmily onto chicken.
    13. Pour enough oil into the wiped skillet to measure about 1/4 inch.
    14. Set over medium-high heat.
    15. When oil is hot add the chicken and fry until golden on both sides and firm to touch, adjusting heat as necessary.
    16. Drain the chicken on towels and keep warm while mixing greens.
    17. In large bowl toss the greens with vinaigrette.
    18. Divide evenly among 4 serving plates. Arrange chicken on greens and sprinkle with crumbled pancetta.
