Fettucini with Chicken and Spinach Recipe

Serves 4 to 6

Ingredients:

  • 1 lb Boneless, Skinless chicken breast, sliced
  • 5 oz Fresh baby spinach
  • 1 lb whole wheat fettucini
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 14 1/2 oz low sodium chicken broth
  • 2 tsp olive oil
  • 1/2 cup half and half
  • Salt
  • Pepper


  • Instructions:

    Bring a large pot of salted water to a boil. Add pasta and cook according to package. Meanwhile, heat oil in large skillet and add shallot and garlic. Cook on med heat, 3 minutes. Add the sliced chicken breast and cook until chicken is brown and cooked through, about 8 minutes. Add broth, spinach, half and half and salt and pepper to taste. Drain pasta and add to skillet. Toss to coat and combine all ingredients for about 1 minute. Serve with lots of grated parmesano reggiano cheese.
