Easy Chicken Parmesan Recipe
Serves 4 Ingredients: 4 chicken breasts (4 oz each), skinless, boneless
2 cups bread crumbs
1/4 cup egg beaters
Olive oil flavored Pam no-stick cooking spray
2 oz Healthy Choice fat free Mozzarella cheese, grated
2 oz Truly Lite fat free Ricotta cheese
1 1/3 cup Healthy Choice spaghetti sauce
Instructions: 1. Dip each chicken breast in Egg Beaters, then coat with bread crumbs.
2. Spray a large skillet with Pam and heat.
3. Quickly brown chicken breasts on both sides, about 3-5 minutes total.
4. Coat baking dish with Pam.
5. Place chicken in pan; top each breast with 1/3 cup of spaghetti sauce.
6. Combine mozzarella and ricotta cheeses.
7. Place an equal amount of cheese on each chicken breast.
8. Cover and bake for 20 minutes at 375~.
9. Remove chicken from oven.
10. Sprinkle with remaining bread crumbs and bake uncovered for 5-10 more minutes or until browned.
