Curry Chicken Pitas Recipe

Serves 2

Ingredients:

  • 1 lb boneless, skinless, chicken breast, cut into 1-inch chunks
  • 2 tbsp margarine
  • 1/2 cup finely chopped onion
  • 1 tbsp curry powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground coriander
  • 2 dashes cayenne pepper
  • 2 tbsp water
  • 2 pitas


  • Instructions:

    1. In a large skillet over medium-high heat melt margarine.
    2. Add onion and saute for 2 to 3 minutes.
    3. Add chicken and saute 5 to 6 minutes, until cooked through.
    4. Add seasonings and water.
    5. Stir well until thoroughly blended.
    6. Split between the two pitas, putting chicken inside and trickling the remainng sauce over them. Alternately, you can just place the chicken on top of the pitas.
