Cuban Chicken Recipe
Serves 4 to 6 Ingredients: 1/4 cup oil, vegetable
1 garlic clove, minced and peeled
1 onion, small, purple, peeled
1/2 pk peas, frozen, thawed (10 oz)
1 can tomatoes (1 lb), peeled, drained and chopped
3 cup rice, cooked, cold
1 cup ham, slivered (optional)
2 cup chicken, cubed and cooked
1/2 cup olives, green, pimento stuffed, sliced
1 avocado, peeled and pitted
Instructions: 1. Heat wok, add oil, garlic, onion & peas.
2. Stir fry about 2-3 minutes till onion is soft.
3. Add tomatoes, rice, ham, chicken and olives.
4. Stir and lift till heated, place in centre of large platter.
5. Surround with slices of avocado.
