Chicken Soup with Guacamole Recipe

Serves 4

Ingredients:

  • 2 qt chicken stock, with pieces of meat left in
  • 1/2 cup rice
  • Salt, to taste
  • Topping:
  • 2 avocado, med
  • 1 tomato, large, diced
  • 4 scallion, with top, sliced
  • 1 chile serrano, minced
  • 2 tbsp cilantro, chopped
  • 2 limes, mexican


Instructions:

1. Peel and slice the avocados, and cut into 1" pieces.
2. The chiles are best chopped fine in a blender.
3. Halve the limes.
4. Pour soup into hot earthenware cazuelas, or onion-soup pots, and spoon on the uncooked topping.
5. Serve with hot tortillas.
