Chicken Satay Recipe

Serves 4 to 8

Ingredients:

  • 1 lb chicken breasts, skinned and boned
  • 1/2 tsp Sambal Oelek (hot-pepper paste, can be found in an Oriental market)
  • 1 tsp grated fresh gingerroot
  • 2 tbsp lemon juice
  • 3 tbsp dark soy sauce
  • 2 tbsp honey
  • 1 tbsp peanut butter
  • 1/2 cup water


  • Instructions:

    1. Cut chicken into 1" cm chunks and thread equally on 15 bamboo skewers.
    3. Set aside.
    5. In a large saucepan or skillet combine sambal oelek, gingeroot, lemon juice, soy sauce, honey, peanut butter and water.
    6. Bring to a boil, stirring constantly, then reduce heat and add as many chicken skewers as will fit without crowding.
    7. Simmer 10 minutes, basting.
    8. Remove from pan and transfer to a rimmed platter.
    9. Repeat with remaining chicken skewers.
    11. Simmer sauce remaining in pan until reduced to about 1 1/2 cup. Pour over chicken.
    12. Cover and refrigerate until cold, then serve.
    13. If desired garnish with cherries and Italian parsley.
