Chicken Satay RecipeServes 4 to 8 Ingredients:Instructions:1. Cut chicken into 1" cm chunks and thread equally on 15 bamboo skewers.3. Set aside. 5. In a large saucepan or skillet combine sambal oelek, gingeroot, lemon juice, soy sauce, honey, peanut butter and water. 6. Bring to a boil, stirring constantly, then reduce heat and add as many chicken skewers as will fit without crowding. 7. Simmer 10 minutes, basting. 8. Remove from pan and transfer to a rimmed platter. 9. Repeat with remaining chicken skewers. 11. Simmer sauce remaining in pan until reduced to about 1 1/2 cup. Pour over chicken. 12. Cover and refrigerate until cold, then serve. 13. If desired garnish with cherries and Italian parsley. |
