Chicken Parmesan Recipe

Serves 6

Ingredients:

  • 2 lb chicken, boned
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1/8 tsp pepper
  • 2 eggs, beaten
  • 1/2 cup parmesan cheese
  • 1 tsp oregano
  • 1 cup white wine
  • 3/4 cup salad oil


  • Instructions:

    1. Pound chicken till thin.
    2. Pat dry and cut into pieces.
    3. Combine bread crumbs, parmesan cheese, spices and salt.
    4. Set aside.
    5. Beat eggs in a shallow dish.
    6. Dip chicken into egg, then into the crumb mixture, coating both sides.
    7. Heat oil in skillet.
    8. Saute chicken until brown - about 3 minutes each side.
    9. Remove to a warm platter.
    10. Drain fat, Stir in wine scraping up brown residue until boil.
    11. Pour over chicken.
