Chicken Paprikas Recipe

Serves 4 to 6

Ingredients:

  • 1 chicken, cut up (3-pound)
  • Salt and pepper
  • 2 tbsp vegetable oil, up to 4
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 5 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 2 tbsp hungarian-style paprika
  • 3 tbsp dill weed
  • 1 cup chicken broth
  • 1 tbsp flour
  • 3/4 cup sour cream

  • Special Equipment: Pressure Cooker



    Instructions:

    1. Sprinkle chicken with salt and pepper.
    2. Heat oil in a 4- or 6-quart pressure cooker.
    3. Saute onions, green pepper, and garlic until tender; remove.
    4. Brown chicken a few pieces at a time; set aside.
    5. Add tomato sauce, paprika, dill weed, and a small amount of chicken broth to oil in pressure cooker; stir until smooth.
    6. Add remaining broth, stirring to mix.
    7. Return chicken and vegetables to pressure cooker.
    8. Close pressure cooker cover securely.
    9. Place pressure regulator on vent pipe.
    10. Cook for 8 minutes, at 15 pounds pressure, with regulator rocking slowly.
    11. Cool pressure cooker at once.
    12. Remove chicken and vegetables to a warm dish.
    13. Stir flour into sour cream; add to hot liquid.
    14. Cook and stir until mixture simmers and thickens.
    15. Pour sauce over chicken.
