Arizona Chicken Recipe

Serves 2


  • 2 chicken breasts, skinned and, boned
  • 1 Dijon mustard (Gulden's also works)
  • 1 butter
  • 1/2 prepared salsa
  • 2 lime juice (this makes the recipe)
  • 1/4 chopped fresh cilantro (optional)


1. Pound each breast between sheets of plastic wrap to a uniform thickness of 1/2 inch.
2. Spread with mustard.
3. In a large skillet, melt butter over medium heat.
4. Add chicken and cook 3-4 minutes on each side.
5. Stir salsa and lime juice together and add to skillet.
6. Simmer gently, uncovered, until chicken is cooked through and sauce has thickened, about 6-8 minutes.
7. Sprinkle with cilantro.
8. Serve with rice or noodles.
