Americanized Chicken Shop Suey Recipe

Serves 4 to 6

Ingredients:

  • 2 whole boneless skinless chicken breast halves
  • 1 tsp salt
  • 1 tsp crystallized ginger, minced
  • 1 cup celery, sliced
  • 1 5 oz can water chestnuts, drained and sliced
  • 1 onion, sliced
  • 2 cup chicken bouillon
  • 2 tbs soy sauce
  • 1 cup mushrooms, sliced
  • 1 lb can bean sprouts, drained
  • Cooked rice
  • 1/2 cup slivered almonds


Instructions:

1. Cut chicken into strips about 2 in long and 1/2 in thick.
2. Place in slow cooking pot with salt, ginger, celery, water chestnuts, onion, bouillon, and soy sauce.
3. Cover and cook on low 5-6 hours.
4. Turn control to high.
5. Add mushrooms and bean sprouts.
6. Cover and cook on high 15 minutes.
7. Serve over hot rice.
8. sprinkle with almonds.
9. Serve with extra soy sauce if desired.
