Yankee Pot Roast Recipe
Serves 6 to 8 Ingredients: 5 or 6 lbs chuck or round beef roast2 cups red wine2 lbs canned tomatoes, crushed1 onion, chopped4 carrots, sliced 1/4-inch thick2 cloves garlic, minced1/3 cup cup brown sugar, packed2 bay leaves1/2 tsp teaspoon nutmeg Salt and pepper to taste
Instructions: 1. Preheat oven to 250 degrees.
2. Put roast in a heavy roasting pan. Mix remaining ingredients and pour over meat.
3. Bake, uncovered, about 1 hour per pound.
4. If you want a thicker gravy, stir 1/4 tablespoons flour with 1/2 cup cold water until smooth. Pour flour mixture into juices and bring to boil.
