Vegetable Beef Barley Soup Recipe
Serves 4 Ingredients: 1 3/4 cups lean beef round, cut into 1-inch cubes
1/2 cup onion, chopped
1 cup tomato sauce
1 1/2 cups carrots, thinly sliced
1 1/2 cups celery, chopped
1 cup mushrooms, chopped
7 tbsp pearl barley
1 tsp salt
1/2 tsp pepper
Instructions: 1. Spray saucepan with non-stick spray, add beef and onion.
2. Saute for 5 to 7 mintues.
3. Add 3 quarts water and bring to a boil.
4. Stir in celery, carrots, and mushrooms.
5. Reduce heat to medium-low, cover partially, and simmer for 1 hour.
6. Add remaining ingredients.
7. Cover and simmer for 1 hour, stirring occassionally.
