Stracciatelle with Tiny Meatballs Recipe

Serves 6

Ingredients:

  • 1 qt chicken broth
  • 2 cup water
  • 1/2 cup pastina (any small pasta)
  • 1 tsp parsley, chopped
  • 1 carrot, thin sliced
  • 1/2 lb spinach, julienned
  • 1/2 lb ground beef
  • 1 egg
  • 2 tsp flavored breadcrumbs
  • 1 tsp Parmesan
  • 2 tsp parsley, chpd
  • 1 small onion, minced
  • 2 eggs
  • Additional Parmesan


Instructions:

1. So many different textures and colors.
2. Worth the little extra effort.
3. Soup: In soup pot, combine ingreds; bring to a low boil.
4. Meatballs: Mix.
5. In sm bowl, beat 2 eggs.
6. With wooden spoon, stir soup as you slowly drop in eggs, stirring constantly.
7. Remove from heat; cover; let stand 2 mins.
8. Serve with Parmesan.
