Dieter's Taco Salad Recipe

Serves 4

Ingredients:

  • 1 lb ground beef, lean
  • 1 onion, medium
  • 1 green pepper, large, chopped
  • 8 oz tomato sauce, no-salt
  • 1 tbsp vinegar
  • 1 tsp mustard, dry
  • 1/2 tsp pepper, red, crushed
  • 1/2 tsp basil, dried, crushed
  • 1/4 tsp garlic powder
  • 1 tbsp water
  • 4 tortillas, 8-inch
  • 4 cup lettuce, shredded
  • 12 tomatoes, cherry, halved
  • 1 carrot, medium, shredded
  • 1/4 cup Parmesan cheese, grated


  • Instructions:

    1. Cook beef, onion, and 1/4 cup of green pepper until beef is brown; drain.
    2. Add next 7 ingredients.
    3. Bring to a boil; reduce heat.
    4. Simmer for 15 minutes.
    5. Warm foil-wrapped tortillas in a 350 F oven for 10 minutes.
    6. Spray 4 10-ounce casseroles with nonstick spray coating; press 1 tortilla into each.
    7. Bake in a 350 F oven for 15 minutes.
    8. Divide lettuce among 4 plates.
    9. Place a tortilla on each plate.
    10. Spoon beef mixture into tortillas.
    11. Top with remaining green pepper, tomatoes, carrot, and cheese.
