Peter's Scrimshaw Inn Rum Pie Recipe

Serves 8


  • 1 1/4 cup milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 3/8 cup milk
  • 3 tbsp flour
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1/2 tsp vanilla
  • 3 tbsp butter
  • 2 tbsp dark Myers's rum
  • Baked 9-inch graham cracker crust
  • Whipped cream
  • Bittersweet chocolate, grated


1. Combine first three ingredients and bring to a boil.
2. Mix remaining milk, flour, cornstarch and egg yolks and add boiling mixture slowly.
3. Return to saucepan, cook slowly, stirring unatil thick.
4. Cook slightly, beat in vanilla, butter and rum.
5. Turn into the crust and chill.
6. Top with whipped cream and grated chocolate.
