Light Waffles Recipe

Makes 32 waffles

Ingredients:

  • 4 cups self-rising flour
  • 2 tbsp sugar
  • 1/4 tsp baking soda
  • 4 cups low-fat buttermilk
  • 1/2 cup vegetable oil
  • 8 egg whites
  • Vegetable cooking spray

Special Equipment: Waffle Iron


Instructions:

1. Combine flour, sugar and soda in a large bowl.
2. Combine buttermilk and oil; stir well.
3. Add to dry ingredients, stirring just until moistened.
4. Beat egg whites until stiff peaks form; carefully fold into batter.
5. Coat a waffle iron with cooking spray and allow waffle iron to preheat.
6. Pour batter onto hot waffle iron and bake.
