James River Waffles Recipe

Serves 4

Ingredients:

  • 3 eggs, separated
  • 2 cups buttermilk
  • 2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 6 tbsp melted butter

Special Equipment: Waffle Iron


Instructions:

1. Beat egg yolks until light.
2. Stir in 1 cup buttermilk.
3. Sift together dry ingredients and beat into yolk mixture.
4. Stir in remaining buttermilk and butter.
5. Beat egg whites until stiff and fold in.
6. Bake in hot waffle iron.
