Indian Muffins Recipe

Makes 18 muffins

Ingredients:

  • 1 egg, beaten
  • 1 cup milk
  • 1 tsp shortening, melted
  • 2 tbsp cornmeal, heaping
  • 1 1/2 cups flour
  • 2 tsp baking powder


Instructions:

1. Mix the egg, milk and shortening together.
2. Combine with the sifted dry ingredients and mix thoroughly.
3. Bake in greased muffin tins at 450 F for about 20 minutes.
