Herbed Breakfast Muffins Recipe

Makes 12 muffins


  • 1 tbsp margarine
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp fresh herbs, use fresh chopped basil if serving muffins with a tomato dish
  • 1 cup milk
  • 1 large egg
  • 3 tbsp margarine
  • Parsley, dill or chives can also be used if you prefer


1. Grease 12 muffin cups with 1 tablespoon margarine.
2. Heat oven to 450 F.
3. Combine in a mixing bowl flour, sugar, baking powder and salt.
4. Add chopped herbs.
5. Combine remaining ingredients and add all at once to flour mixture.
6. Stir just enough to moisten.
7. Batter will be lumpy.
8. Fill muffin cups 2/3 full.
9. Bake for 20 to 25 minutes until golden brown.
