Ginger Muffins Recipe
Makes 24 muffins Ingredients: 1/2 cup shortening
1/2 cup sugar
1 egg
1 cup molasses, light preferably
3 cup all-purpose flour
1 1/2 tsp soda
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
1 cup hot water
Instructions: 1. Cream together shortening and sugar.
2. Beat in the egg, then the molasses.
3. Sift together the dry ingredients; stir into molasses mixture.
4. Gradually add the hot water, beating until smooth.
5. Line muffin pans with paper baking cups.
6. Fill 2/3 full.
7. Bake at 350 degrees for 20-25 minutes or till done.
8. Touch lightly with finger - done if it bounces back.
