Anisplatzchen (German Aniseed Cookies) Recipe

Makes 40 cookies

This is an entirely different tasting cookie which originated in Germany.

They are very unusual in that they are self frosted tops and can be made well ahead of the holidays and stored in air tight tins.

  • 3 large eggs, room temperature
  • 1 cup plus 2 tbsp sugar
  • 1 3/4 cup flour, sifted
  • 1/2 tsp baking powder
  • 1/2 tsp salt, or less
  • 1 tsp anise extract, or 3 tsp anise seed

1. Beat eggs in mixer until fluffy and add the sugar gradually beating continuously.
2. Continue to beat for 20 minutes (the time is correct). 3. Add the dry ingredients which have been sifted together and beat for another three minutes.
4. Add anise extract.
5. Drop on well greased and floured cookie sheets and form a round cookie by swirling the dough with a spoon.
6. Let stand to dry over night.
7. Bake at 325 for about 15 minutes or until cookies are a light golden color.
