Health Muffins Recipe

Makes 24 muffins

Ingredients:

  • 2 1/4 cup AM Wheat Bran
  • 2 cups milk or soy milk
  • 2 eggs or egg replacer
  • 1/4 cup AM Unrefined Vegetable Oil
  • 1/2 cup honey, or less to taste
  • 2 1/2 cups AM Multi-Blend flour
  • 2 1/2 tbsp non-alum baking powder
  • 1 tsp sea salt (optional)
  • 1 tsp cinnamon
  • 1 1/2 cups raisins
  • 3/4 cup chopped walnuts or pecans (optional)


Instructions:

1. In a large mixing bowl combine the bran, milk, eggs, oil and honey.
2. In a second bowl, combine all the remaining ingredients.
3. Add the dry mixture to the liquid and mix thoroughly.
4. Fill oiled muffin tins.
5. Bake in 350 F oven for 30 minutes, or until tops are lightly browned.
6. Cool on a rack.
7. When thoroughly cooled, store covered in refrigerator or freezer.
