Taboule Salad Recipe
Serves 2
Ingredients:
1 cup fine bulgur wheat
3/4 cup diced onion
1/2 cup diced green onions (including tops)
1 1/2 tsp parsley
1 tsp basil
1/2 cup fresh mint, cut fine
1/2 cup lemon juice
3/4 cup oil
2 tomatoes, cut in slices
Instructions:
1. Cover bulgur with water; let stand 1 hour; drain; pan dry in skillet over low heat, stirring occasionally.
2. Add remaining ingredients and mix well.
3. Chill at least 1 hour; serve.
