Taboule Salad Recipe

Serves 2

Ingredients:

  • 1 cup fine bulgur wheat
  • 3/4 cup diced onion
  • 1/2 cup diced green onions (including tops)
  • 1 1/2 tsp parsley
  • 1 tsp basil
  • 1/2 cup fresh mint, cut fine
  • 1/2 cup lemon juice
  • 3/4 cup oil
  • 2 tomatoes, cut in slices


  • Instructions:

    1. Cover bulgur with water; let stand 1 hour; drain; pan dry in skillet over low heat, stirring occasionally.
    2. Add remaining ingredients and mix well.
    3. Chill at least 1 hour; serve.
