Wild Rice Pancakes Recipe

Serves 4

Alternately to this recipe, you can just add 1 cup cooked wild rice to your favorite pancake mix.

Ingredients:

  • 2 cup flour
  • 1 tsp salt
  • 4 tsp baking powder
  • 3 tbsp sugar
  • 1 egg
  • 1 1/2 cup milk
  • 1/3 cup oil
  • 1 tbsp sour cream
  • 3/4 cup cooked wild rice


Instructions:

1. Mix flour, salt, baking powder and sugar.
2. Set aside.
3. Beat eggs; add milk, oil, sour cream and wild rice.
4. Add to dry ingredients.
5. Batter will be lumpy.
6. Cook on heated griddle. Makes 12-14 pancakes.
