Wild Rice Dinner Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup wild rice pancake/waffle mix (Arrowhead Mills)
  • 1/4 cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 egg or egg replacer
  • 2 tbsp am unrefined vegetable oil
  • 1 1/2 cup milk or milk substitute
  • 1/2 tsp sea salt (optional)


Instructions:

1. Preheat oven to 400 F.
2. Stir dry ingredients together.
3. Beat liquids together in a separate bowl.
4. Add dry mixture to liquids and stir well.
5. Divide into 12 oiled muffin tins and bake for 20 minutes or until done.
