Leftover Rice Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/4 cup whole wheat flour
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 2 eggs
  • 2/3 cup skim milk
  • 1/4 cup vegetable oil
  • 1/4 tsp almond extract
  • 1 cup cooked brown rice


  • Instructions:

    1. Stir first three ingredients together.
    2. Beat remaining ingredients, stirring rice in last.
    3. Combine two mixtures just until moistened.
    4. Spoon into 12 muffin cups.
    5. Bake at 440 degrees for 20 minutes.
